Cabbage/Potato Soup
Grocery list:
1/2 cup Onion
1 cup Celery
4 Carrots
7 cubed Potatoes
2 cans chicken broth
1 Head cabbage or a sack of shredded cabbage
1 stick butter or margarine
1 can evaporated mild
3/4 lb.velveeta cheese
In a large dutch oven or pot, saute carrots. celery, onion and saute together over medium heat. Add cabbage and saute some more. Stir in chicken broth. Add potatoes and cover with enough water to keep from scorching or cooking dry. Cook on low to medium heat. When vegetables are tender add 1 can evaporated milk and velveeta cheese. Ready to serve when cheese melts. Makes a huge amount.
